The chocolate salame is a traditional Italian recipe usually made for kids but loved by everyone: it’s a mix of cookies and chocolate, covered in powder sugar and cut into slices. To impress, it’s sometimes tied like a proper salame with string.

If you’re wondering what a salame is, let me explain: salame is what non Italian speakers call “salami”. Salame is the correct name both for the charcuterie and this dessert, salami is the English version which in Italian language actually is plural meaning “2 salame” aka “2 salami”. So in Italian, salame is the singular one, salami is the plural one. I stick with the Italian name, salame, but if you want to use the English words then remember:

Salame is salami in English, and the Italian plural salami becomes salamis

The main ingredient of this sweet salame are the cookies: you must strictly use dry cookies (the Digestive are perfect) to which you will add the butter and the other ingredients. Butter cookies will make the salame excessively heavy and fat, while the dry ones will maintain the right balance between the various ingredients used.

As for the consistency, this chocolate salame should be soft in the area with chocolate and hard in the part of the cookies: for this reason, the cookies should never be blended but should be broken roughly with your hands. If you crumble them in a blender, the final result will be a chocolate dough with a vague hint of cookies, instead if you crumble them with your hands, the consistency will be perfect and the taste will be as well.

The chocolate must be bitter and in a tablet; I strongly recommend not to use bitter cocoa because you will not be able to get the consistency you want.

Raw eggs, that must be fresh and of excellent quality, are mandatory for a real Italian chocolate salame recipe; once your salame is ready, do not forget to put it into the freezer to harden. This is a topical moment, because it will kill all the bacterias in the eggs making it safe to eat the raw chocolate salame. Also, this step will also give the salame the perfect hardness.

Here is the recipe for a classic Italian chocolate salame to be prepared in literally no time. Below the recipe, some tips and more ideas for your chocolate salame.

Ingredients for one salame

  • 300 grams of dried cookies
  • 150 grams of softened unsalted butter
  • 200 grams of dark chocolate (50% cocoa)
  • 2 eggs
  • 100 grams of caster sugar
  • Icing sugar

Instructions

  1. Melt the chocolate in a bain-marie and let it cool;
  2. Beat the softened butter with the sugar in order to obtain a creamy and spongy mix;
  3. Pour one egg at a time into the butter + sugar mixture, continuing to beat with the blender at medium speed;
  4. When the mixture is ready, add the melted chocolate always whisking to incorporate it to the rest of the ingredients;
  5. Crumble the cookies coarsely and add them to the chocolate cream. Mix gently with a spatula;
  6. Transfer the mixture onto a sheet of parchment paper and distribute it in such a way as to give it the shape of a sausage;
  7. Roll it in the parchment paper and tighten on the sides so as to seal the ends and avoid the dough coming out;
  8. Wrap this sausage in aluminum paper, tighten well and refrigerate for 3-4 hours or until it has hardened;
  9. Pull it out of the refrigerator, remove all the aluminum paper and roll the chocolate salami into the icing sugar.
  10. Serve the sliced salame or put it on a cutting board after having "tied" it with kitchen string just as you would do with a normal salame.

How to make the perfect Italian Chocolate Salame

  1. Store in refrigerator and eat within 4 days of making;
  2. Wrap it in a double layer of clingfilm and a layer of foil and freeze it on day of making. It will last for up to 1 month;
  3. You can add a tablespoon of rum to the mixture, if the salami is not aimed at children;
  4. You can add dried fruit and candied fruit to the mixture;
  5. For a stronger taste, roll the salami into bitter cocoa instead of sugar before serving it;
  6. If you want to make a white chocolate salami, remember to reduce the doses of sugar by 50% otherwise your salami will be too sweet;
  7. This chocolate salame should always be served cold because if it heats up it loses consistency and flavor.
