Ice cream pie, the recipe for a perfect summer

If I say pie, you surely think of a beautiful savory one or a classic apple or cherry one but have you ever thought how great is to make a pie with ice cream? It’s even better is it’s easy to make and it can be prepared way in advance, to be eaten at your convenience.

The filling really depends by your taste and also by what you’ve at home: one of the best is definitely the chocolate chip but you can really decide how to fill your ice cream pie based also on your guests.

Clearly making an ice cream pie is easier than making a baked cake but it it does take patience because the temptation to open the freezer will kill you.

What you need for 8 portions
375 grams of biscuits (Digestive are perfect)
75 grams of unsalted and softened butter
100 grams of chocolate chips
100 grams of puffed rice cereal
1 liter of ice cream of your choice
1/2 liter of fresh whipped cream
Chocolate and/or caramel sauce to decorate

How to make your ice cream pie
1. Put the biscuits, butter, chocolate chips and rice cereal in a food processor and blitz to form damp crumbs.
2. Press the mixture into the bottom and up the sides of a round 23cm tin. Put the tin in the refrigerator for at least 1 hour.
3. Spread the ice cream into the tin reaching about 3/4 to the edge and smooth the top with a spatula. Add the whipped cream and put the in the freezer for at least 2 hours.
4. Pull out the ice cream cake 10 minutes before serving and decorate it with the chocolate sauce or the caramel one or both. Cut into slices and serve.

Preparation time: 10 minutes + refrigeration
