Cooking like an Italian requires a lot of effort and the use of good ingredients. But, most of all, it requires respect for the tradition which cannot be changed. Well, it can be changed but only if the new version will add something different to the original recipe (just like Edward did here, for example, on the basis of my very Italian recipe). One of the most battered recipes of the Italian cuisine is without a doubt the amatriciana pasta.

Each person in the world thinks to have the truth in his/her hands but most of the time the recipe is just wrong with the addition of ingredients that have nothing to do with the real Italian recipe (like garlic, onion and so on and so forth).

Pasta amatriciana only requires tomatoes, guanciale (pork cheek), pasta and pecorino cheese. Nothing more, nothing less. The original recipe is here but I’ve decided to show you how to make a real pasta amatriciana with a quick video. It’s a 2 minutes video where you will learn the basic of this pasta and how easy it can be done at home.
