Eggplant pizza recipe for a summer lunch or dinner

Sometimes we just need some easy and comfort food and these eggplant pizza take about 30 minutes and they’re so rewarding you won’t never get tired!

Clearly they cannot substitute your pizza craving but for sure they’re great if you want to eat something healthy yet delicious; they’re also gluten free and vegetarian which is a big plus.

The recipe is really simple and you can play with the toppings as you like: I’ve only added tomato and mozzarella cheese but you can add ham, a different cheese, anything you like basically just like a normal pizza.

Ingredients for your eggplant pizza
2 medium eggplants
2 mozzarella cheese (try not use any mozzarella substitute)
Tomato sauce
Black pepper
Extra virgin olive oil

1. Cut your eggplant into 1″ thick rounds. Cut your mozzarella cheese into stripes or cubes.
2. Prepare your tomato sauce by seasoning it with some salt, some pepper and a splash of extra virgin olive oil.
3. Place the eggplant in a baking sheet lined with parchment paper and top each round with tomato sauce and mozzarella cheese. Add salt and pepper to your taste.
4. Bake at 180° (356°F) until heated through and cheese is bubbling, about 15 minutes. Serve immediately or lukewarm, adding some fresh basil on top if you like.
